Handmade Ravioli


It's a wonder that we aren't huge blimps! We have blogged about food more than anything since we've moved. The portions are huge but 9 time out of 10 we can't eat it all. What can you say we love food!

Anyways, the other night, actually it was Easter dinner, we made homemade ravioli! We didn't want to spend $30 on a pasta machine to roll out the dough so we used a rolling pin instead. Wow, what a mistake! It was very hard to get the dough rolled out into thin sheets. After awhile, we decided that thin sheets weren't going to happen. So, we ended up with fat ravioli.

The pasta machine wasn't the only thing we didn't have. We looked all over town and couldn't find a ravioli form so we used a fork instead to seal the edges. Needless to say, our ravioli looked a little weird and none of them were the same size.

We made spinach ravioli with a ricotta, marjoram, and parsley filling with an artichoke, tomato sauce. Everything was homemade. It was delicious.
